I'm new to Aperture.
Could somebody help me with this organizational question with photostream? I want photostream to import my photos into a new folder each month, automatically named according to my folder naming convention, 2012 -06(jun).
Is this possible to set up?

No, however you can rename the projects and Aperture will still import them to the right place. You can read more on that here: Did You Know… You Can Move and Rename Your Photo Stream Projects.
