I have been creating vaults on an external HD with the partition map scheme set to 'Master Boot Record' in error. I've since copied them onto a external drive with the GUID partition map scheme. My question is whether the vaults should be ok, I cannot seem to be able to restore them from the new HD, after 2 hours of one still shows as 0% restored.

In that case I’d build new Vaults. I don’t know anything about the “Master Boot Record” scheme, however if the Vaults won’t restore I think that’s a pretty good sign that they are broken.
If you actually need these Vaults, try just converting them to Libraries instead of importing them. Read this article to learn about that.
