I updated to Aperture 3.3. How come there is no more color on the tool bar icons, neither on the Library? I had icons and menus in color in previous version.

The topic of the interface colors is one of the most discussed topics on this site. You should read through some of the posts about v3.3. Unfortunately no one has the real answer for “how come?”. That answer lies deep within Apple. For us users, it is what it is.

Read this Aperture 3.3 review. As Thomas said it won’t tell you why, but you’ll see that this is expected.
