How does one go about turning a photo to black and white, BUT, leaving one color or one area colored for effect?

Use the Black & White Brick to turn the whole image black and white. Click on the “gear” and select “Brush Black & White Away”. Brush away to reveal the color.

Steve,

No, brushes were introduced in Aperture 3. You can use the Color adjustment and selectively desaturate colors, but the brushes will definitely help.

Time to upgrade ;-)
